Fall Birthday Cake

Hello friends!  Its been a while since I've posted anything.  I needed to take some time off becuase of changes in my life that I needed to adjust to.  Cake baking, decorating and designing come from the creative part of me and that part of me had shut down and needed a sabatical in order for the rest of me not to break down.  It sounds complicated I know, but that's me, a very complicated person at times.  Well, enough of me!

My sister Mayra was planning a surprise party for our sister Cheryl that was turning 50, mind you, they live up in Rhode Island, and I live down in Florida, even lower in the map, Miami to be exact.  So Mayra was getting creative as to what theme to pick. After going back and forth she decided that a Fall theme was appropriate and asked me to do a cake with that theme. When the time came I packed up my utensils and flew in on a Wednesday with my oldest daughter Ashley and hid in Mayra's house until Saturday for Cheryl's party, if she had seen me she would have known for sure that we were planning something.

Mayra and I went shopping for the ingredients and I bought a flour I had never used before, but figured it didn't make a difference. What a nightmare!!!!! OMG! The cake burnt on the outside and was uncooked in the middle. We thought it was the oven, so we went out and bought an oven thermometer and yes, the oven was a bit off so I made another batch and the same thing happened AGAIN!!!! At this point I'm about to cry, so Mayra says: "what if it's the flour? I have some flour in the cupboard, try it, and can't be any worse." So, guess what? It was the flour and I could breath again.  I can laugh now, but the stress! the birthday girl had a blast at her party and danced the night away and loved her cake.

The cake was huge, the bottom tier was a 10, then an 8 and top a 6 inch. The bottom tier was 6 inches high and the other two top tiers were 5 inches high each.

Pink and Pearls Birthday Cake

I would love to say that this cake was an original Leelee's Cake-abilities design, but it is not.  It actually is a celebrity cake created by Devine Designs and I replicated with a few minor details by the request of a very faithful client of mine.  She always has fabulous birthday cakes created by me. She knows exactly what she wants and how she wants it and until now I have not disappointed her. The flavor was bottom tier red velvet and the top tier, vanilla.  When she picked up the cake she was so happy.

Romantic Wedding Cake

This four tier wedding cake was a delight to make.  The flowers are all made out of gumpaste in different shades of old rose.  It was a very simple cake, but that took a while to make because of the details in piping it had.  I thought my arm would fall off from piping so many dots. It was all worth it though because it turned out beautiful.

Chinese Inspired Cake

It's been a while since I have posted anything in my blog.  Honestly, I've been too busy and then lazy to actually sit down in front of the computer to post, well I decided to put some up.  I made some cakes that I cannot find the pictures for, or maybe, I just didn't take any.  Oh, well! 
This cake was made for a lady that was turning 50.  I really love the way it came out.  The fans are made of gumpaste as well as the flowers.

A Trip To China Cake and Sweets

 
I am happy to say that this cake turned out beautifully despite the horror I encountered while delivering it and having to literally redue the three bottom tiers becuase the bottom tier decided to collapse a corner away from the venue making the others crack. Im not gonna lie, I went into panic mode, all I could think was that the quinceanera's cake was ruined. After I composed myself and driving Ignacio and Lauren, crazy, I called Miles Cakes that was 15 minutes away and asked if I could go there to repair the cake. I was shaking like a leaf and I guess they heard the despair in my voice and said yes. I am so grateful for the owner Adriana for not only allowing me to go to her shop to fix my cake, but for actually leaving her house and coming to help me. I had Iggie deliver the goodies and let the client know I'd be late with the cake and explained what had happened. The cake was repaired and we went and delivered it. As I was taking it into the venue all you could hear was," omg, that's huge!" and " Is that a cake?" all the guests were arriving dressed beautifully and I looked like death all nasty and sweaty. I felt such a sense of relief once that cake was placed on the table. I never knew how it felt to have a cake disaster until this day. The client was very understanding and  happy with how the cake had turned out and that is what mattered most. I will be forever grateful to Adriana, the owner of Miles for her help and to Ignacio and Lala for their patience and encouragement in the midst of it all.
 
The cake was delivered to The beautiful Redlands Koi Gardens.  The place was absolutely breath taking.  I felt as if I was walking into Mulan's story. The Quinceanera wanted to make her celebration a "Trip to China" and that's was the cake in the shape of the luggage meant. All the guests were dressed in beautiful Asian attire. The flavor for the cake was yummy moist red velvet with cream cheese buttercream filling and vanilla with vanilla buttercream filling. The chinese take-out box on the side of the board where the cake is was made out of rice crispies treats covered in white chocolate and then fondant, and I hand painted the motif . The decals on the luggage were images I found online and had them printed on rice paper.  I also made other goodies like, butter cookies in the shape of take out boxes(this was fun because the birthday girl and her friend came over and actually covered the cookies and painted the motif on them), Oreo covered cookies with the nunber 15 in chinese, edible gold covered milk covered bonbons, and chocolate ganache chinese lantern cake pops.

Pink Scallop Wedding Cake

I made this cake for a lovely couple.  She showed me a picture of a cake she liked and I replicated in, but I used a different tip for the effect. the cake is covered in fondant and decorated with buttercream that I tinted in two shades of pink.  I created two toppers for the cake. The reason why I did this was because I made the "C" out of gumpaste that I painted with edible silver, but I was worried that because of the humidity that we have in Miami it would not dry completely, so I also made a beautiful flower out of gumpaste in 4 shades of pink, just in case.  The letter dried and I was a happy camper. I will use the flower for something else soon. The cake was rum flavor.

Grey and Yellow Wedding Cake

I loved making this cake! I underestimated how long it would actually take me decorating it, but it truly was fun!  The client sent me a picture of a cake she liked and I replicated it with a few changes, but in a much larger scale.  The cake was to serve 100 people.  The bottom tier was and top tier are red velvet with creamcheese buttercream, and the middle tier was yellow cake with vanilla bean buttercream.  The parts that took so long making were the frill on the middle tier. I though I'd never finish, then  the chevron on the bottom tier, because it is tricky to cut the pieces and have the line up exactly where they should. This cake looks super simple,but it takes precision to get everything straight and polished looking.  I think I accomplished that.  I was so pleased to see that they everyone loved it.

Luau Cake

This cake were for a young girls Quinces.  The flavor is Leelee's specialty vanilla flavor with dulce de leche filling.  This cake was huge. All the elements are made of gumpaste.  Almost had a heart attack thinking that something would fall or break during the delivery.  It made it in one piece and the client loved it!

Single Flower II Cake and cupcake

I had made this cake already for a wedding.  The client saw it and wanted the same for her wedding.  very simple but pretty idea. The flavor was marble cake with buttercream filling.  the cupcakes are half chocolate and half vanilla with buttercream frosting and a gumpaste flower and edible pearls.

Parisian Love

This cake was made for a Parisian theme bridal shower.  I am very pleased on how it came out.  The silhouettes were cut out out fondant with a bit of tylose for stability.  Flavor is Marble with Chocolate buttercream filling.  "Love is in the air"

this cake was made for a bridal shower.  Flowers and branches are all made of fondant.  The flavor of the cake is yellow sponge cake with chocolate ganache filling.

Sunflower Cake

This is a very simple cake.  I made it for a baby shower.  The flavor is guava with fondant.  The sunflowers are made of gumpaste. This cake with another tier and could be great for a bridal shower or even a wedding with a monogram on top.

Arabian Night Quince Cake

This client is the niece of a very dear friend of mine since high  school.  She wanted to make a cake for her little sister that was turning 15 and was worried because she had to drive the cake from Miami to Fort Myers.  I would say it is a good 3 hour drive from where I live.  The cake was intricate in it's design.  The top and bottom layers are six inches high and the middle layer is 4 inches high.  The flavor is marble with vanilla bean buttercream filling.  The number is made of equal parts of fondant and gumpaste and molded by hand.  the swirls are made of royal icing and gilded in edible 24 Karat gold. I made sure that the cake was sturdy enough for the ride reinforcing it with wooden dowel rods. I loved the colors the client selected" a deep purple, a pretty electric blue, and a fuchsia.  The cake had shimmer on it, but you can't really see it in the picture. I helped place the cake in the car at 7 am Saturday morning and literally prayed that it would make it in one piece.  I have not heard from the client yet, but believe everything went well.

Gerbera Daisy Cake and Dessert Table

My first born turned 21 and she wanted a party.  We debated as to what kind of a party it would be and we decided on a small, close friends and family party. It's funny,  the family was missing in action, the only family I can really excuse is my family that live in the North East, but such is life, It's a matter of priorities. Hopefully we have instilled  our kids with a better concept of what family truly is. Anyway, We had some finger foods, an amazing DJ with a great mix of dance music and Ashley's request for a dessert table.  I created her invitations, The cake,  and all the goodies.  My baby girl had a blast and made me melt when she told me she was blessed to have a mom like me. Party  colors were: Pink and Orange
