Elmo cake

This is a smaller version of the first Elmo Cake I made a while back. This is a returning client that I had made her daughter an Owl cake last year for her first birthday and she loved it so much that she ordered her daughter's 2nd birthday cake with me. The flavor was Leelee's vanilla-rum cake with dulce de leche filling. This client wrote this text to me:

"Just wanted to say... As always, the Elmo cake was beautiful. Plus delicious thank you for helping to make great memories for my kids"

Graduation Cake

I have been making cakes for this client for years now.  I have lost count of how many cakes I have made for her; her girls Quinces, family birthdays, and recently her girls graduation from college and university. Her youngest daughter just graduated and she wanted a special cake to celebrate the ocasion.  She sent me three separate pictures of which she wanted elements from. The doll is made of sugar. I went ahead and created exactly what she had requested and she loved it!




Caring for Miami Cake

I work for a none profit counseling center formerly named CF Counseling which is a  ministry of Christ Fellowship Church, the church my family and I attend.  The church also had other ministries that served our community such the Mobile Unit, that provides medical and dental assistance for those without insurance, and Family Life Center that provides help to women that are pregnant by equipping them with life skills, free medical checkups, etc. Recently the church decided that it would be a great idea and combine all these three ministries under the name Caring for Miami. 
On December 2 we had our first annual Christmas party as CFM where all the staff and volunteers of these three entities came to celebrate together.  I thought it was a appropriate to make a cake with our logo. If you would like to learn more about CFM and how it touches our community, go to http://caringformiami.org.

A Trip To China Cake and Sweets

 
I am happy to say that this cake turned out beautifully despite the horror I encountered while delivering it and having to literally redue the three bottom tiers becuase the bottom tier decided to collapse a corner away from the venue making the others crack. Im not gonna lie, I went into panic mode, all I could think was that the quinceanera's cake was ruined. After I composed myself and driving Ignacio and Lauren, crazy, I called Miles Cakes that was 15 minutes away and asked if I could go there to repair the cake. I was shaking like a leaf and I guess they heard the despair in my voice and said yes. I am so grateful for the owner Adriana for not only allowing me to go to her shop to fix my cake, but for actually leaving her house and coming to help me. I had Iggie deliver the goodies and let the client know I'd be late with the cake and explained what had happened. The cake was repaired and we went and delivered it. As I was taking it into the venue all you could hear was," omg, that's huge!" and " Is that a cake?" all the guests were arriving dressed beautifully and I looked like death all nasty and sweaty. I felt such a sense of relief once that cake was placed on the table. I never knew how it felt to have a cake disaster until this day. The client was very understanding and  happy with how the cake had turned out and that is what mattered most. I will be forever grateful to Adriana, the owner of Miles for her help and to Ignacio and Lala for their patience and encouragement in the midst of it all.
 
The cake was delivered to The beautiful Redlands Koi Gardens.  The place was absolutely breath taking.  I felt as if I was walking into Mulan's story. The Quinceanera wanted to make her celebration a "Trip to China" and that's was the cake in the shape of the luggage meant. All the guests were dressed in beautiful Asian attire. The flavor for the cake was yummy moist red velvet with cream cheese buttercream filling and vanilla with vanilla buttercream filling. The chinese take-out box on the side of the board where the cake is was made out of rice crispies treats covered in white chocolate and then fondant, and I hand painted the motif . The decals on the luggage were images I found online and had them printed on rice paper.  I also made other goodies like, butter cookies in the shape of take out boxes(this was fun because the birthday girl and her friend came over and actually covered the cookies and painted the motif on them), Oreo covered cookies with the nunber 15 in chinese, edible gold covered milk covered bonbons, and chocolate ganache chinese lantern cake pops.

Super Mario Brothers Cake

I had been wanting for the longest time to make a Super Mario Brothers cake and I got the opportunity this week.  One of the things I love to do the most is modeling figurines so this was my favorite cake of the week. It is a Leelee's vanilla cake with dulce de leche filling.  The tiers are a 10x4 and an an 8x4. I am grateful for the clients that keep coming back over and over again and trust and admire my cakes not only for the excellence in which they are made, but also the flavor.  I made this little boys birthday cake last year too. The theme was Batman. I hope he enjoys his cake this year as much as the one last year!

Game of Thrones cake

The client was surprising her boyfiend with a Game of Thrones party for his birthday. She went all out with banners, costumes and an amazing cake.  The cake is completely edible.  The swords were made out of fondant with gumpasta then painted with edible silver and distressed on the handle.  I hand cut the symbols and castles placed on the borders. The flavor was vanilla bean with peanut butter nutella filling.  When the client picked up the cake, she absolutely loved it.


 
 

PInk Gift box and Lingerie Cake

I made this cake for a lingerie party.  I think this client found me online and called me, or maybe she went to a party and saw one of my cakes.  Honestly, I don't remeber, lol! All I know is that she loved it very much and I enjoyed making it.  The cake is vanilla with vanilla buttercream filling and frosting covered in fondant.  The actual corset is fondant with a bit of tylose for consistency.

Pirate Cake and goodies

The client I made this cake and goodies for is a great client of mine.  I made her little boys Cars birthday cake and goodies last year too.  This year the theme was pirates so I suggested making a treasure chest.  I wanted it to look distressed like it was found in the bottom of the ocean  and I think I achieved the look well.  Everything on this cake is edible.  The jewels are made out of sugar turned into a hard candy.  I burned myself while pouring it into the gem molds, ouch!  The map was made with fondant mixed with Tylose and I used an edible ink pen to write and draw on it.  I also made cupcakes with little cannons, seashells, maps, and pirate flags as toppers as well as cute cookies with little girl and boy pirates.  When I delivered the cake that the client so it her reaction blew me away. She said, Oh my God, Leelee, no way! You are too much!"I wish I could have taken a picture of her face, lol!  Needless to say that I was extremely happy that the cake I made for her exceeded her expectations.

Soccer Jersey

I was so excited in having the opportunity to make this cake for a young man through the wonderful organization Icing Smiles, Inc, thanks to my dear friend Rosie that told me about it.  I have always wanted to use my talent to make a difference in a person's life and this is one of the many ways. I am looking forward to more opportunities like this one.

The cake is a rum flavor with dulce de leche filling.  Everything is edible.  I was told that he wanted a cake with the Argentine soccer team.  I figured a Jersey with their colors and emblem with a soccer ball would do.  When the mom picked it up, she was very happy and gave me a big hug and proceeded to tell me about her younger son and his illness and all they have endured.  The cake was for his big brother.

This is a chocolate cake.  The client was my daughter, Lauren. lol!  She ordered this cake from me for her friend's birthday. Her friend is a Heat's fan just like my daughter.  Her friend loved the cake.  The flavor was chocolate with buttercream.

Coca Cola Classic Cake

OMG!  Did I have a blast making this or what? The client wanted to surprise his girlfriend's mother that happens to love coke.  He challenged me by saying that he wanted me to make him a cake in the shape of a Coca Cola bottle and I said" "heck yeah".  I love, love to make 3D structures out of cake.  Let me tell you, this cake was carved out of 5 6 inch cakes that were carved into the bottle and the peak was RTK all covered in fondant.   In the picture the cake looks small, but in reality it was 17 inches tall.  When the client came to pick it up he said he didn't think it would turn out to be as big as it was.  I was truly happy the way it turned out.  the flavor was Leelee's Specialty rum cake with dulce de leche filling.

Pokemon

I was so thrilled when I was asked to make this cake. The client had an idea of what she wanted and sent me several pictures of which she wanted separate elements from.  I really don't know much about Pokemon, but when I have a cake to do of something that is very popular and I don't know much about it, I do some research.  Did you know that there's a gazillion Pokemon characters?  I feel bad for the parents that would have to purchase all of these for their little one's collection.  It should truly cost a fortune! lol!  Anyway, I made the little characters out of MMF with Tylose. The client wanted the child's name in Pokemon font, so I downloaded the font  and created it then in photoshop to give it a little twist and cut letters out in yellow and then in a deeper blue.  I was happy with the result.  The ball is made out of yummy Leelee's specialty vanilla with dulce de leche filling as well as the bottom cake,   I also made cookies for this client. Her hubby came to pick up the cake and he looked really worried.  I asked if he liked the cake and he said: "OH, yes, I'm just concerned that it will arrive in one piece".  I assured hime that if he drove safely there would not be any problems. He smiled and left.
